Hello 2017 and Vanilla Buttermilk Cupcakes!

Well, it is a new year! New year and new me…that’s what everyone is saying right?  I am not sure I buy into all of that, but I am all for trying to do more or working harder to achieve goals. With that said, I do have a little bit of a New Year’s resolution of sorts. I am going to try to like cakes and cupcakes (I guess) more this year.  It will be painful and I may feel like I am losing part of my identity *joking*, but I really am going to try.  I decided to start the year off by putting my spatula where my mouth is, not literally of course, and made cupcakes as my first baking of the year.

We all have to start somewhere.  I started with a Vanilla buttermilk cupcake. I didn’t really have an excuse because I had bought buttermilk to make my buttermilk biscuits so I had all the ingredients in the house.  I have had Flour Arrangements buttermilk cupcakes pinned on one of my Pinterest boards for quite some time and kept avoiding making them.  Now I feel so silly because not only were they incredibly quick and easy to make, but they are my idea of a perfect cupcake.  They are light and tender and have a wonderful flavor.

Then came the frosting.  I am going to go on a bit of a tangent here.  For those who don’t live in the South or have not spent time there, you are missing out on the wonder that we casually refer to as Publix.  It may be just a grocery store, but I have never experienced a grocery store with such an extensive and tasty bakery selection.  The way I explained the level of quality is when people want a birthday cake in the South, they don’t go out to a bakery, they just walk into the local Publix and order a cake.  Yes, they seriously are that level of quality.  Ok, back to the point.  I came across a recipe for a copycat Publix frosting and I knew I had to try it out.  It may not have lived up to all of my hopes and dreams, but the texture made piping a cinch and it tasted pretty good. It was so great to work with while I am trying to hone my craft of learning how to properly decorate a cupcake.

I can’t say with any degree of certainty that I will like cakes or cupcakes at the end of this journey, but I am for sure working towards accepting them.

Almost Publix Buttercream

  • Servings: 20
  • Difficulty: Easy

  • 1 stick of unsalted butter
  • 1 cup vegetable shortening
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon butter extract
  • 1/4 teaspoon almond extract
  • 1 1/2 teaspoon meringue powder
  • 4 cups confectioners’ sugar


  1. In an electric mixer, beat butter, vegetable shortening and salt until light and fluffy.
  2. Add in all three extracts and mix until combined.
  3. With the mixer off, add in two cups of confectioners’ sugar and the meringue powder. Mix on the lowest speed, then gradually add in the remaining sugar until all is mixed in.
  4. Once fully incorporated, beat on a medium speed until smooth, about 5 minutes.
